Hi everyone, This is what I have been up to. I hope everyone is doing well, and that you all are staying cool. We are under a heat wave, and that is putting it mildly. LOl

Fresh cucumbers from the garden.. Now let me see ...What shall I do with them?

How about making some sweet relish. My food processor I bought many years ago, and it is one of my most used appliances when it comes to making relishes and I use it so much in the summer while canning my fruits and veggies.
After chopping cukes, onions,  red and green sweet peppers, I sprinkle salt and cover with ice cold water, and let it sit for 2 hours.


I drain and then rinse with clear cold water, and drain.
I mix my vinegar, sugar and spices, (mustard seed, and celery seed), once it comes to a boil I add veggies, and cook for ten minutes,,,

Pour in hot sterilized jars, wipe tops, cap and place 

in water bath, process in boiling water for 15 minutes.

Voila!! this is the best relish, so yummy. It is great with hamburgers and hot dogs, in potato salad, just about anything. lol My Mother said it was just plain delicious placed between bread. When she gave me this complement I just beamed from ear to ear.LOL

This relish also makes for wonderful gifts at the holidays, or any special occasion.

We also have been canning new potatoes, now this is quite a feat, but well worth the effort.
But what has taken up so much of our energy and time has been the renovation of the porch, Now that is a big story. But I am so thankful we can now see the light at the end of the tunnel. lol I hope to show pics. when we finish, or sooner. lol

Oh, how i love relish! Some people don't like it, can you believe it? I love the way it makes the house smell when I make it - yours looks wonderful! I hope I get enough cucumbers this year to make some. Last week we had a hard freeze and I don't know if my cucumbers will come back, they were only 8 or 9 inches tall and doing so good, and I had JUST taken the hot caps off . . . oh well, sometimes you win, sometimes you loose :-(

We need some of your heat, I just come in from the backyard and it was only 65 degrees, at 8:00 p.m., (it should be wayyyy warmer than that)!

I pray that you will get cooler weather - heat waves are so deadly.

Stay close to the water and don't forget the sunblock!

Oh how I have missed you!! I knew you had been busy but I didn't know the half of it. Putting up new potatoes is hard work, I did it once and haven't again though they are so yummy. Your pickle relish looks wonderful. The porch looks wonderful.
I love your thoughts on everything and you bring such encouragement to me and when I get honey, I will mail you some. We have temperatures like you have most of the time. We haven't hit a hundred once in June which is really, really odd.
My garden is just sort of enjoying the summer because only cool days and not hot weather.
I do wish we lived closer and I would talk your ear off, I am sure.
I would help you can too.
My daughter came over to pick plums yesterday and she was going to make strawberry jam and I told her about your tutorial on making strawberry jam and it is the best I have ever saw. I could almost believe I was in your kitchen.
She will be doing that today.
Could I share a prayer request?
Could you pray her husband gets a job? He hasn't worked in 7 months.
He goes and checks every day at places to work. We have a 35 percent unemployment rate right now in our town. Yesterday my daughter was so broken. God keeps reminding me of his promises,I just thought I would ask.
I know that where two or more are gathered Jesus is in our midst. His name is Ryan.

I continue to be impressed and inspired by your canning skills. This relish has my mouth watering. I have cucumbers planted, but they are a long way from being ready to pick. Do you use special cucumbers or will any type work in your relish?
I agree with you on our current heat wave. It's a full time job just keeping the plants watered. :)
I look forward to seeing pictures of your porch.

IT IS REALLY NO FUN TO COOK AROUND HERE BECAUSE MY HUSBAND COULD CARE LESS WHAT HE EATS....I REALLY LOVED COOKING FOR AMY AND RICHIE BUT I TELL MYSELF....I CAN COOK A SMALL GOOD MEAL AND IF HE DECIDES TO EAT HE CAN. HE GRAZES ON SNACKS...I CAN'T DO THAT AND I DON'T LIKE TO DO IT.

Good morning Sue,
I do hope you rest lots and lots today. Humidity just kills me. It just makes the heat so much hotter.
Don't make yourself sick working so hard. Your comments make me laugh. I am so aware that my luck could run out at anytime. My daughter had to work until Midnight last night, so she drove real slow in the driveway looking for skunks, I met her at the door with it open as she sprinted in the doorway. There was no skunks last night.
I am such a softy if I do call the trapper they will be destroyed and that is what is so hard. I just wish I could catch them and tame them. :)

never made any sweet relish - you made it look way easy -could you email me the recipe - and have you made dill relish? I have always bought relish and I agree sweet relish or Dill relish is wonderful in potato salad!

Those pictures of those jars all filled up and in front of the red ones are just gorgeous..Those beautiful cucumbers..yum yum. I adore eating them right from the garden..yummy!!

Wow, you have been a busy bee! Your relish looks lovely. I'll bet it's good. Last year I found a recipe for freezer sweet pickles on someone's blog and that is my new favorite for using up the homegrown cukes. I'm impressed that yours are harvested already -- you must live where it's super hot. We have ours planted, but nowhere near harvest time yet. I'm glad to have found your blog! It looks like you have lots of interesting stuff here :)
