Farmhouse Recipes

~beets pickles~



Washed and ready for the pot. I leave at least 2 inches on the beet so it won't bleed and will keep nutrients.
After washing they are cooked until  a fork will pierce into it easily, but be careful and don't over cook... next put in cold water and  peel .
Slice and place in hot sterilized jars, to this add the vinegar mixture that you have made and is hot..Ingredients....
2 cups sugar
2 sticks cinnamon
1 Tablespoon whole allspice
1- 1/2 teaspoon salt
3- 1/2 cups vinegar
1-1/2 cups water
bring mixture to boil, simmer 15 mins.,remove cinnamon sticks keep hot. 
wipe rims of jars, place hot sterilized lids and caps on , put jars  in water bathe canner with hot water that is on a low boil,  when jars are in pot raise the temps so they remain on a boil for 15 minutes.
